So some of you may remember my post a few weeks back about using our pie iron sandwich makers when we camp. You can purchase pie irons at most stores that sell camping supplies, but the ones that are made with cast iron work the best in the long haul. I've put in a couple in my shop under the camping category.
Now for our first recipe of the week...breakfast sandwiches. We make these every morning when we camp.
Ingredients:
- White bread
- Medium size eggs (large eggs will overflow)
- Cooked breakfast sausage
- Grate cheese
- Salt/pepper
- Pam and/or squeezable butter
Step 1: Butter or spray Pam on one side of the pie iron. You can also put the butter directly on the bread if you prefer.
Step 2: Make a whole in the bread and break egg over hole. Sprinkle salt and pepper to taste.
Step: 3: Add sausage.
Step 4: Add grated cheese.
Step 5: Place second piece of bread on top and top with butter.
Step 6: Cook over hot coals until warm and crisp. Time depends on how hot your coals are. Check after three minutes. If it's ready, flip the pie iron over and continue cooking second side.
Step 7: Take off the fire and enjoy a hot sandwich.
TIP: These hot pie irons will melt plastic--that includes your picnic table. We use an old metal tray to hold ours.
