Easter Recipe: Grandma's Custard Lime Jello

My childhood is full of holiday memories that include my Grandma Doerman's super lime jello. But, I remember it especially on Easter with ham and homemade rolls. I've carried on the tradition, serving it on Easter at our house each year. But, really it's fabulous anytime. Even for breakfast. The morning after.

Check me out rocking that awesome denim jumper next to Grandma D. This was on the Sunday I was baptised.

Grandma Doerman's Custard Lime Jello

  • 1 large box lime jello
  • 1/2 can crushed pineapple (drain and reserve juice)

Mix jello according to box. Add crushed pineapple and poured into a 9/13 pan. Chill until firm.

  • 1 package of Dream Whip (found near the jello section in the supermarket)
  • 1 box of cream cheese

Beat Dream Whip according to package directions. Add cream cheese. Spread the cream cheese mixture on top of the firmed jello.

  • Combine pineapple juice and water to make 1 cup
  • 2 eggs
  • 2 Tbls. flour
  • 1 1/2 Tbls. lemon juice
  • 1 cup sugar

Make custard on the same day the jello is served. Mix the above ingredients and and cook over medium heat until thick. Cool and spread over the cream cheese layer.

Thank you for the amazing example you have been to me--as a mother, a wife, a friend and a woman. I see bits of reflected in my everyday life, even though we live miles apart. You are in my parenting, my crafting, my knitting, my reading, my friendships, my hospitality, my celebrations, my cooking...the list goes on and on. As I look at my life there doesn't seem to be an area that doesn't reflect a bit of  "you."

Thank you for every cross-country meet you came to, every 4-H meeting you attended and every homesick call you endured that first year in college. Thank you for loving me and accepting me and embracing me as the person God uniquely created--even when I am quirky and you "just don't get it." Thank you for always instructing, encouraging and loving me right where I am. 

Thank you for the love and joy you bring to my children--the laughter and fun that comes with each visit from Memaw. Now, as a mother myself, I see myself reflected in my children. And in doing so, I am beginning to understand the challenges you faced parenting a certain stubborn toe-head. Ahem. Sorry about that. But thank you for mothering me in a way that molded that stubbornness into determination and endurance. 

It seems just the tip of the iceberg thank you for these things. I could write a book on all you've given to me. So, thank you and enjoy your special day. We can eat cake when you come out at Easter! Love you.

P.S. This is your "official" birthday card, as I did not get the real one in the mail in time!

This is me with my Grandma Doerman. I still remember this dress that she made for me--dark purple velvet and it had a white satin ribbon sash. I loved it.

Christmas Movie List

Can I just say that I love Christmas movies?! We don't have the Hallmark station or cable, so I check them out from the library or watch them at my in-laws. We own quite a few on DVD as well. Watching them is one of my favorite things this time of year. Here are some of our favorites.

Family Movie Night

Remember, the Wonderful World of Disney movies on Sunday nights? About a year ago, we started our own "Wonderful World of Disney" night. We start early in the evening (since there's school on Monday) and the kids lay out blankets on the floor (to save the carpet, ahem) and they get to eat in front of the TV--gasp! It's something they look forward to every week.

So, over quite some time now, I've been compiling a list of our favorite family movies. Finding non-animated movies that the whole family can enjoy is tough these days. Even Disney and "kid" movies have innuendos, OMGs, etc. So I started picking up classics at Wal-Mart when I found them. But I really hit to gold mine on Amazon.com...we have Amazon Prime and can stream movies to our TV for a $1.99 rental. But even Amazon has some "holes" in their selection. Hello, public library! Most of the movies can be requested and placed on hold at your library for free (well not really free because your taxes pay for you, so technically you have joint ownership).

So here is our MOVIE LIST. It can be found through the button on the right-hand column and in the top navigation bar, under "grow." I'll continue to update this page as we find more "must-sees," so PIN IT and refer back to it. Enjoy.

I'm Back

I'm back from the amazing trip to New Zealand. Lots of fabulous food, great company, laughter, incredible coffee, new friends, Hobbit holes, rain and greeness, and immense joy at the wedding of my brother-in-law. This is the first time in 7 years that we've been away on our own for more than 2 nights. Matt and his dad did all the planning so I just had to show up and follow them around. It was bliss and a spectacular adventure.

  I came home feeling completely "filled up" and remembering why I love my husband.  A week away from three kids in a beautiful country can do that for a girl. The kids had a blast, too, while staying with family friends.

I'm catching up on laundry and life. I will post better photos when I have time, but here's a taste from my Instagram photos.

60th Knitting Party for Mom

My mom is an amazing knitter--and has been for oh, more than 30 years....So for her 60th birthday, we threw her a surprise party. Here are some of the pretty, knitty decorations.

We had the party outside and displayed the sweaters she has knitted through the years. My dad snuck me into the house and I stuff garbage bags and stole away with them. So many of them bring back fond childhood memories for me.

It was an incredibily fun day. Friends from through the years came, as well as her workmates and knitting club ladies. It was a relaxing time for me too, since I was sans-kids.

May the Force be with you

A couple of months ago, my kids started pretending Star Wars. They had never seen the movie, but would stare at the DVD case photos and then run downstairs and try to match the costuming. So last week while my parents were visiting from Californina, we introduced them to the original movie.

We celebrated Beth's 2nd birthday a couple weekends ago...ok, like a month ago. I'm behind on my pictures-posting-blogging right now.
